Ingredients

2 boneless skinless chicken breasts

1 cup gluten-free panko breadcrumbs

1/3 cup grated parmesan cheese

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon smoked paprika

1/2 teaspoon salt

1/2 teaspoon black pepper

2 eggs

Olive oil spray


Instructions

1. Pat chicken breasts dry and trim excess fat. Flatten slightly if needed.

2. In one bowl, beat the eggs. In another, mix panko, parmesan, and all spices.

3. Dip chicken into egg, then press into breadcrumb mixture until fully coated.

4. Preheat air fryer to 400°F.

5. Place coated chicken in a single layer in the basket. Spray with olive oil.

6. Cook for 10-14 minutes until internal temp hits 165°F. No flipping needed.

Notes

Use thinner chicken cutlets for faster cook time.

For extra crispness, let the coated chicken rest 5 minutes before cooking.
