Golden slices of apple and tender butternut squash are layered with warm spices, crispy bacon, and a crunchy onion topping in this comforting Apple Butternut Squash Casserole. This fall-inspired dish is both savory and slightly sweet, making it a show-stopping side for any holiday table or cozy weeknight dinner.


Ingredients

3 cups butternut squash, peeled and sliced

2 apples, sliced (Honeycrisp or Granny Smith preferred)

1 cup carrots, diced

4 slices bacon, cooked and crumbled

1 cup crispy fried onions

1 tablespoon fresh thyme leaves

1 teaspoon garlic powder

2 tablespoons olive oil

1 teaspoon salt

1/2 teaspoon black pepper

1/2 cup panko breadcrumbs (optional)


Instructions

1. Preheat oven to 400°F (200°C).

2. Peel and slice the butternut squash. Core and slice apples. Dice carrots.

3. Toss squash, apples, and carrots with olive oil, garlic powder, salt, pepper, and thyme.

4. Spread the mixture in a greased 9×13-inch baking dish. Roast uncovered for 25 minutes.

5. Meanwhile, cook the bacon until crisp and crumble it.

6. In a small bowl, mix the crumbled bacon, crispy fried onions, and optional panko.

7. After 25 minutes, remove the dish from the oven. Sprinkle the topping mixture evenly over vegetables.

8. Return to oven and bake for an additional 15 minutes until golden and bubbling.

9. Let cool for 5–10 minutes before serving. Garnish with fresh thyme if desired.

Notes

Use Honeycrisp or Granny Smith apples for best texture.

For a vegetarian version, omit bacon and add toasted pecans.

Store leftovers in an airtight container for up to 4 days.
