Ingredients

4 salmon fillets

1 tablespoon olive oil

1 tablespoon butter

3 cloves garlic, minced

0.5 cup sun-dried tomatoes, chopped

0.25 teaspoon crushed red pepper flakes

1 teaspoon Italian seasoning

0.5 cup chicken broth

1 cup heavy cream

0.5 cup Parmesan cheese, grated

Salt and pepper, to taste

Chopped basil or parsley, for garnish (optional)


Instructions

1. Season salmon fillets with salt and pepper.

2. In a large skillet over medium-high heat, heat olive oil and butter.

3. Place salmon skin-side up and sear for 4 minutes.

4. Flip and cook for another 3-4 minutes until golden. Remove and set aside.

5. Reduce heat to medium and add minced garlic. Cook for 1 minute.

6. Add sun-dried tomatoes, red pepper flakes, and Italian seasoning. Cook 1-2 minutes.

7. Pour in chicken broth and simmer for 2 minutes.

8. Stir in heavy cream and Parmesan cheese. Simmer 3 minutes until thickened.

9. Return salmon to the pan and spoon sauce over fillets. Simmer 3-4 minutes.

10. Garnish with herbs and serve immediately.

Notes

Use center-cut fillets for even cooking.

Grate fresh Parmesan for best melting.

Don’t overcook salmon—remove once it flakes easily.
