Ingredients

3 pounds Yukon Gold potatoes

1 tablespoon salt (for boiling water)

1/2 cup heavy cream

1/2 cup whole milk

1/2 cup unsalted butter

1 teaspoon salt (for seasoning after mashing)

1/2 teaspoon freshly ground black pepper

1 teaspoon fresh thyme (optional, for garnish)


Instructions

1. Peel 3 pounds of Yukon Gold potatoes and cut them into 2-inch chunks.

2. Place potatoes in a pot, cover with cold water, and add 1 tablespoon of salt. Bring to a boil, then simmer until fork-tender, 15–18 minutes.

3. While potatoes boil, heat 1/2 cup heavy cream and 1/2 cup whole milk in a small saucepan until warm.

4. Drain potatoes and return to pot. Cook on low for 1–2 minutes to evaporate moisture.

5. Mash potatoes with a masher or ricer. Add 1/2 cup butter and stir until melted.

6. Pour in warm cream and milk mixture, mix until smooth.

7. Season with 1 teaspoon salt and 1/2 teaspoon pepper. Stir gently to combine.

8. Serve warm with fresh thyme on top and an extra drizzle of melted butter.

Notes

Warm the dairy before mixing to avoid cooling the potatoes.
