Description

Ingredients

2 medium zucchini, grated and well squeezed

1 large egg

1 1/2 cups shredded mozzarella cheese, divided

1/2 cup grated parmesan cheese, divided

2 cloves garlic, minced

1 teaspoon Italian seasoning

1/2 teaspoon salt

1/4 teaspoon black pepper

1 tablespoon chopped fresh parsley, plus more for garnish

1/2 cup marinara sauce for serving


Instructions

1. Preheat the oven to 425°F and line a baking sheet or small rectangular pan with parchment paper.

2. Grate the zucchini, then place it in a clean kitchen towel and squeeze out as much liquid as possible.

3. Add the drained zucchini to a mixing bowl with the egg, 1 cup mozzarella, 1/4 cup parmesan, garlic, Italian seasoning, salt, pepper, and parsley. Stir until fully combined.

4. Spread the mixture into an even rectangle about 1/4 to 1/3 inch thick on the prepared pan.

5. Bake for 15 minutes, or until the mixture is set and the edges begin to turn lightly golden.

6. Remove from the oven and top with the remaining 1/2 cup mozzarella and 1/4 cup parmesan.

7. Return to the oven and bake for 5 to 7 minutes more, until the cheese is melted and bubbly.

8. Broil for 1 to 2 minutes if needed for extra golden color, watching closely.

9. Rest for 5 minutes, sprinkle with more parsley, then slice into breadsticks.

10. Serve warm with marinara sauce.

Notes

Squeeze the zucchini very well or the breadsticks can turn out too soft.

Let the breadsticks rest a few minutes before slicing so they hold together better.

For the best texture, reheat leftovers in the oven or air fryer instead of the microwave.
