3/4 cup unsweetened shredded coconut (divided, lightly toasted)
Optional: 1 tablespoon cinnamon-sugar for dusting
Instructions
1. Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
2. In a medium bowl, mash the cottage cheese gently with a fork until creamy but not fully smooth.
3. Add the egg, maple syrup, flour, and cinnamon. Stir until well combined.
4. Gently fold in the diced apples and 1/2 cup of the toasted coconut.

6. Roll each ball in the remaining 1/4 cup of toasted coconut to coat.
