Ingredients

6 cups russet potatoes, peeled and diced

4 cups chicken broth

1 large yellow onion, diced

3 cloves minced garlic

4 tablespoons butter

8 ounces cream cheese

1/2 cup sour cream

1 cup shredded cheddar cheese

8 slices cooked bacon, crumbled

1 teaspoon salt

1/2 teaspoon black pepper

1/4 cup green onions, chopped (optional)


Instructions

1. Peel and dice the potatoes and onions, then add to the crockpot with garlic.

2. Pour in the chicken broth, add butter, salt, and pepper.

3. Cook on LOW 7–8 hours or HIGH 4–5 hours.

4. Use an immersion blender to blend part of the soup.

5. Stir in cream cheese, sour cream, and cheddar.

6. Serve topped with bacon, green onions, or extra cheese.

Notes

Mash manually if you don’t have a blender.

Add broth when reheating for smoother texture.
