Ingredients

2 cups all-purpose flour

1 cup Greek yogurt

1 tablespoon olive oil (plus more for finishing)

1 1/2 teaspoons baking powder

1/2 teaspoon salt

1 cup cottage cheese

2 cloves garlic, minced

2 tablespoons fresh parsley or basil, chopped


Instructions

1. Mix flour, yogurt, olive oil, baking powder, and salt until a dough forms. Knead until smooth. Rest for 15 minutes.

2. Blend cottage cheese until smooth.

3. Warm olive oil in a pan. Add garlic and cook until fragrant. Stir in herbs and remove from heat.

4. Divide dough into 4 balls and roll into flat rounds or ovals.

5. Spread whipped cottage cheese over each. Brush with garlic-herb oil.

6. Bake on preheated cast iron or sheet at 475°F for 10–12 minutes until golden.

Notes

Whip the cottage cheese until smooth for even melting.
