Ingredients
2 cups all-purpose flour
1 tablespoon baking powder
1 teaspoon garlic powder
1/2 teaspoon salt
1/2 cup unsalted butter, cold and cubed
3/4 cup buttermilk
1 cup shredded cheddar cheese
1 cup lump crab meat, cooked
2 ounces cream cheese, softened
1/2 teaspoon Old Bay seasoning
1 tablespoon chopped fresh parsley
1 egg, beaten (for egg wash)
Instructions
1. In a bowl, combine 1 cup lump crab meat, 2 oz softened cream cheese, 1/2 tsp Old Bay seasoning, and 1 tbsp chopped parsley. Mix until evenly combined and set aside.
2. In a large bowl, whisk together 2 cups all-purpose flour, 1 tbsp baking powder, 1 tsp garlic powder, and 1/2 tsp salt.
3. Cut in 1/2 cup cold, cubed butter using a pastry cutter or your fingers until the mixture resembles coarse crumbs.
4. Fold in 1 cup shredded cheddar cheese, then pour in 3/4 cup cold buttermilk and stir just until a shaggy dough forms.
5. Turn the dough onto a floured surface and pat into a 1-inch thick rectangle. Cut into 8 pieces.
6. Flatten each portion, add a spoonful of the crab mixture in the center, then pinch the dough to seal.
7. Place biscuits seam-side down on a baking sheet lined with parchment paper.
8. Brush tops with the beaten egg and bake at 400°F (200°C) for 18–20 minutes until golden brown.
9. Garnish with parsley and serve warm.
Notes
Make sure your butter is very cold for the flakiest texture.
Don’t overwork the dough—mix until just combined.
