Ingredients

4 boneless, skinless chicken thighs

1 tablespoon olive oil

1 small onion, diced

3 cloves garlic, minced

1 1/2 cups mushrooms, sliced

1/3 cup sun-dried tomatoes in oil, chopped

4 cups chicken broth

3/4 cup soaked cashews

1/2 cup water (for blending cashews)

1 tablespoon nutritional yeast

1 teaspoon Italian seasoning

1/2 teaspoon salt (or to taste)

1/4 teaspoon black pepper

2 tablespoons fresh basil, chopped (for garnish)


Instructions

1. Season chicken thighs with salt and pepper. Sear in olive oil over medium-high heat until golden. Set aside.

2. Sauté onion until soft, then stir in garlic until fragrant.

3. Add mushrooms and sun-dried tomatoes. Cook until mushrooms release their moisture and brown.

4. Deglaze with chicken broth, scraping up browned bits. Return chicken to the pot and simmer 15 minutes.

5. Blend soaked cashews with water and nutritional yeast until creamy.

6. Stir cashew cream into the soup, add Italian seasoning, adjust seasoning. Simmer another 5–10 minutes.

7. Garnish with fresh basil and serve hot.

Notes

Soak cashews in hot water for 30 minutes for best blending.

Use a high-speed blender to get that silky-smooth texture.
