Ingredients

1 tablespoon olive oil

1 pound Italian sausage

1 pound ground beef

1 medium onion, diced

4 cloves garlic, minced

2 tablespoons tomato paste

1 can crushed tomatoes

6 cups chicken broth

2 teaspoons Italian seasoning

1/2 teaspoon red pepper flakes

1 teaspoon salt

1/2 teaspoon black pepper

8 lasagna noodles, broken into pieces

1 cup heavy cream

1 cup grated parmesan cheese

1/2 cup ricotta cheese

2 tablespoons chopped fresh parsley

1 cup shredded mozzarella cheese


Instructions

1. Heat the olive oil in a large Dutch oven over medium heat.

2. Add the Italian sausage and ground beef, then cook until browned, breaking the meat apart as it cooks. Drain excess grease if needed.

3. Stir in the diced onion and cook until softened. Add the garlic and cook for 30 seconds until fragrant.

4. Mix in the tomato paste, Italian seasoning, red pepper flakes, salt, and black pepper. Cook for 1 to 2 minutes.

5. Pour in the crushed tomatoes and chicken broth, then stir well and bring the mixture to a gentle simmer.

6. Add the broken lasagna noodles and cook until the noodles are tender, stirring occasionally so they do not stick.

7. Lower the heat and stir in the heavy cream, parmesan cheese, and mozzarella cheese until the soup is creamy and smooth.

8. Ladle into bowls and top each serving with ricotta cheese and chopped fresh parsley before serving.

Notes

Break the lasagna noodles into small, even pieces so they cook evenly and are easier to eat in a soup bowl.

For a thinner soup, add an extra splash of broth before serving or when reheating leftovers.

If making ahead, cook the noodles separately and add them later so they do not soak up too much liquid.
