Ingredients

2 whole garlic bulbs

1 tablespoon olive oil

2 tablespoons butter

1 cup heavy cream

1 tablespoon lemon zest

2 tablespoons fresh lemon juice

3/4 cup grated Parmesan cheese

1/2 teaspoon salt

1/2 teaspoon cracked black pepper

1/4 teaspoon crushed red pepper flakes (optional)

2 tablespoons chopped fresh parsley

12 ounces fettuccine (or pasta of choice)


Instructions

1. Preheat oven to 400°F (200°C). Slice the tops off garlic bulbs, drizzle with olive oil, wrap in foil, and roast for 35–40 minutes. Let cool, then squeeze out garlic paste.

2. In a skillet over medium heat, melt butter and a little olive oil. Add roasted garlic, mashing into the butter to release flavor.

3. Stir in heavy cream, lemon zest, and juice. Let simmer for 5 minutes until slightly thickened.

4. Add Parmesan, salt, black pepper, and optional red pepper flakes. Stir until cheese melts into sauce.

5. Cook pasta according to package instructions, then drain and add to the sauce. Toss to coat evenly.

6. Garnish with chopped parsley and extra lemon if desired. Serve immediately.

Notes

Don’t skip roasting the garlic—it transforms the flavor from sharp to sweet and buttery.

If sauce is too thick, add a splash of pasta water or milk to loosen it.

For a lighter version, swap heavy cream for half-and-half or a plant-based alternative.
