Ingredients

4 large carrots

2 tablespoons olive oil

1/3 cup finely grated parmesan cheese

1/4 cup panko breadcrumbs

1/2 teaspoon garlic powder

1/2 teaspoon salt

1/4 teaspoon black pepper

1 tablespoon fresh thyme or parsley, chopped


Instructions

1. Peel and slice carrots into 1/2-inch coins. Steam until fork-tender (about 10 minutes).

2. Place carrots on a parchment-lined baking sheet and gently smash each with a glass.

3. Drizzle with olive oil and sprinkle with parmesan, breadcrumbs, garlic powder, salt, and pepper.

4. Roast at 425°F (220°C) for 20-25 minutes until edges are golden and crisp.

5. Let rest a couple minutes and garnish with fresh herbs before serving.

Notes

Smash gently—you want texture, not mush.

Panko crumbs give the crispiest finish, but regular breadcrumbs work too.

Leftovers can be revived in an air fryer or hot oven for extra crisp.
