2 boneless, skinless chicken breasts

2 large eggs
1 cup panko breadcrumbs

1/2 teaspoon paprika
1/2 teaspoon salt
1/4 teaspoon black pepper
1/4 cup frying oil
1/4 cup mayonnaise
1/4 cup sour cream
1 tablespoon lemon juice
1 teaspoon Dijon mustard
1 tablespoon fresh dill (plus more for garnish)
Instructions
1. Slice the chicken breasts horizontally to make 4 thinner cutlets. Place them in a bowl or zip-top bag with dill pickle juice. Brine for at least 1 hour or overnight.
