Ingredients
2 pounds chicken legs (drumsticks)
1 large yellow onion, sliced
4 garlic cloves, minced
2 tablespoons brown sugar
1 teaspoon smoked paprika
1 teaspoon dried thyme
1 teaspoon salt
1/2 teaspoon black pepper
3/4 cup chicken broth
1 tablespoon olive oil
Instructions
1. Heat olive oil in a skillet and sear chicken legs until golden, about 2-3 minutes per side.
2. Layer sliced onions and garlic on the bottom of the slow cooker.
3. Mix brown sugar, paprika, thyme, salt, and pepper. Rub over seared chicken.
4. Place chicken in crock pot, pour broth around the edges.
5. Cook on LOW for 5-6 hours or HIGH for 3-4 hours.
6. Spoon broth over chicken when serving. Optional: thicken with cornstarch slurry.
Notes
Don’t skip the sear — it adds flavor and locks in moisture.
For thicker sauce, mix 1 tablespoon cornstarch with 2 tablespoons cold water and stir into hot broth.
Add a few sprigs of fresh thyme or rosemary before serving for aroma and color.
