Ingredients
2 boneless, skinless chicken breasts
2 tablespoons Cajun seasoning

1 teaspoon onion powder
1 teaspoon salt
1 cup chicken broth
1 cup diced tomatoes, drained
4 ounces cream cheese
1 cup shredded cheddar cheese
1/4 cup heavy cream (optional)
12 ounces penne pasta
2 tablespoons chopped fresh parsley
Instructions
1. Place chicken breasts in the crock pot and sprinkle with Cajun seasoning, garlic powder, onion powder, and salt.
2. Add chicken broth and diced tomatoes over the top. Cover and cook on LOW for 6 hours or HIGH for 3 hours.
3. Shred the chicken in the pot using two forks.
4. Stir in cream cheese and cheddar until melted and smooth. Add heavy cream if using.
5. Cook pasta separately until al dente. Drain and add to the crock pot, stirring to coat.
6. Let sit on warm for 10-15 minutes. Garnish with parsley and serve.
