Ingredients
4 tablespoons butter
1 yellow onion, diced
2 cloves garlic, minced
1/3 cup all-purpose flour
2 cups chicken broth
1 cup milk
3 cups cooked shredded chicken
2 cups frozen mixed vegetables
1 teaspoon salt
1/2 teaspoon black pepper
2 cups Bisquick baking mix
2/3 cup milk (for biscuit topping)
4 tablespoons melted butter (for biscuit topping)
Instructions
1. Melt 4 tablespoons of butter in a skillet over medium heat. Add diced onion and cook 5–6 minutes until soft.
2. Stir in minced garlic and cook 1 more minute until fragrant.
3. Sprinkle in flour, stir constantly for 1–2 minutes to cook off the flour taste.
4. Gradually whisk in chicken broth and milk. Stir constantly until thickened.
5. Add shredded chicken, frozen vegetables, salt, and pepper. Stir and simmer until heated through.
6. Transfer mixture to a greased 9×13-inch baking dish.
7. In a separate bowl, mix Bisquick, milk, and melted butter until just combined.
8. Drop spoonfuls of biscuit dough on top of the chicken filling.
9. Bake at 400°F for 25–28 minutes until biscuits are golden.
10. Let cool 5–10 minutes before serving.
Notes
Don’t overmix the biscuit dough—lumpy is good for fluffier biscuits.
If your filling thickens too much before baking, stir in a splash of milk to loosen it.
