Description

Easy Italian Apple Cake is a simple one-bowl apple dessert that tastes like something from a tiny café in Tuscany. It’s light, not too sweet, and loaded with soft baked apples, making it just as perfect for a quick breakfast or afternoon coffee as it is for an easy dessert after dinner. This cozy cake is one of my favorite breakfast ideas and dessert ideas when I want a comforting bake that feels special but uses pantry ingredients—an easy recipe you can pull together fast for last-minute guests, family gatherings, or whenever you need new food ideas for a homey treat.


Ingredients

1 1/2 cups all-purpose flour

1 1/2 teaspoons baking powder

1/4 teaspoon fine sea salt

1/2 cup unsalted butter melted and slightly cooled

3/4 cup granulated sugar

2 large eggs room temperature

1/2 cup whole milk or 2 percent milk

1 teaspoon vanilla extract

3 medium apples peeled cored and thinly sliced

2 tablespoons lemon juice

1 teaspoon ground cinnamon

2 tablespoons sliced almonds optional

1 tablespoon coarse or granulated sugar for topping

Powdered sugar for dusting optional


Instructions

1. Preheat the oven to 350°F (175°C). Grease a 9-inch round cake pan or springform pan and line the bottom with parchment paper.

2. Peel, core, and thinly slice the apples. Toss them with the lemon juice and ground cinnamon until evenly coated, then set aside.

3. In a medium bowl, whisk together the all-purpose flour, baking powder, and fine sea salt until well combined.

4. In a large mixing bowl, whisk the melted butter and granulated sugar until glossy and slightly thickened. Add the eggs one at a time, whisking well after each addition, then whisk in the vanilla extract.

5. Add the dry ingredients to the wet ingredients in two additions, alternating with the milk, stirring gently after each addition just until a smooth batter forms with no dry streaks.

6. Fold most of the cinnamon-coated apple slices into the batter, reserving a handful of slices for the top of the cake.

7. Pour the batter into the prepared pan and smooth the top. Arrange the reserved apple slices decoratively over the surface, then sprinkle with sliced almonds and the coarse or granulated sugar.

8. Bake for 35 to 45 minutes, or until the cake is golden brown and a toothpick inserted into the center comes out with a few moist crumbs but no wet batter.

9. Let the cake cool in the pan for 10 to 15 minutes, then run a knife around the edge and carefully transfer it to a wire rack to cool further.

10. Dust the cooled or slightly warm cake with powdered sugar if using, slice, and serve.

Notes

For the best texture, choose firm apples like Granny Smith, Honeycrisp, or Pink Lady so they hold their shape while baking.

Do not overmix the batter once you add the flour; mixing just until combined keeps the crumb soft and tender.

If the top of the cake browns too quickly, tent it loosely with foil during the last 5 to 10 minutes of baking to prevent over-browning while the center finishes cooking.
