Ingredients

1 pound ground beef

1/2 pound ground pork

1 cup breadcrumbs

1/2 cup milk

2 large eggs

3 cloves garlic, minced

1/4 cup grated Parmesan cheese

2 tablespoons chopped parsley

1 teaspoon Italian seasoning

1 teaspoon salt

1/2 teaspoon black pepper

2 tablespoons olive oil

3 cups marinara sauce


Instructions

1. In a large mixing bowl, combine breadcrumbs and milk. Let sit for 5 minutes.

2. Add ground beef, ground pork, eggs, garlic, Parmesan, parsley, Italian seasoning, salt, and pepper to the bowl. Gently mix until combined.

3. Roll the mixture into 1 1/2-inch meatballs. Makes about 20 meatballs.

4. Heat olive oil in a skillet over medium heat. Sear meatballs in batches until browned on all sides, about 6–8 minutes total.

5. Transfer meatballs to a pot with marinara sauce. Cover and simmer over low heat for 20 minutes until cooked through and infused with flavor.

Notes

Don’t overmix the meat mixture or you’ll end up with tough meatballs.

Use a cookie scoop for evenly sized meatballs.

Make-ahead tip: freeze uncooked meatballs and cook straight from frozen, adding a few minutes to the simmer time.
