1 1/2 cups graham cracker crumbs

3 large egg yolks
1 1/2 cups eggnog
2 tablespoons cornstarch
1 teaspoon vanilla extract
1/4 teaspoon ground nutmeg
1/8 teaspoon ground cinnamon optional

1 cup granulated sugar for caramel
1/4 cup water
1 tablespoon unsalted butter for caramel

Instructions
1. Preheat the oven to 350°F (177°C) and lightly grease a 9 inch tart pan with a removable bottom. Place the pan on a baking sheet.
2. In a bowl combine the graham cracker crumbs, 1/3 cup sugar, 6 tablespoons melted butter, and 1/4 teaspoon fine salt. Stir until the mixture resembles damp sand.
3. Press the crumb mixture firmly into the bottom and up the sides of the tart pan, packing it tightly with the bottom of a measuring cup for an even crust.
4. Bake the crust for 10 to 12 minutes or until lightly golden and fragrant, then set aside to cool slightly while you prepare the filling.
5. In a mixing bowl beat the softened cream cheese until completely smooth with no lumps, then add 1/2 cup granulated sugar and beat until creamy.
