Ingredients

3 large eggs

1 cup whole milk

1 cup all-purpose flour

0.5 teaspoon salt

2 tablespoons unsalted butter (melted, plus more for greasing pan)


Instructions

1. Preheat your oven to 450°F (232°C). Place a popover or muffin pan in the oven for at least 10 minutes to get hot.

2. In a bowl, whisk 3 large eggs until frothy. Add 1 cup whole milk and whisk until fully combined.

3. Gradually add 1 cup all-purpose flour and 0.5 teaspoon salt. Whisk until smooth and lump-free.

4. Whisk in 2 tablespoons of melted unsalted butter.

5. Let the batter rest at room temperature for 15–20 minutes.

6. Carefully remove the hot pan and brush each cup with melted butter. Fill each about 2/3 full with batter.

7. Bake at 450°F for 15 minutes. Then reduce heat to 350°F and bake another 15–20 minutes, until puffed and golden. Do not open the oven door while baking.

8. Remove from oven, pierce each popover with a knife to release steam, and serve immediately.

Notes

Use room temperature ingredients for the best rise.

Don’t open the oven door early—steam is key to puffiness.

Letting the batter rest improves the structure and texture.
