Ingredients
2 boneless skinless chicken breasts
1 lb baby potatoes, halved
4 garlic cloves, minced
0.5 cup freshly grated Parmesan cheese
1 cup heavy cream
1 tbsp olive oil
1 tbsp butter
2 sprigs rosemary
2 sprigs thyme
1 lemon, zested
Salt and black pepper to taste
Instructions
1. Season chicken breasts with salt and pepper. In an ovenproof skillet over medium-high heat, sear them in olive oil for 3-4 minutes per side. Set aside.
2. In the same skillet, add halved potatoes cut-side down and cook undisturbed for 5 minutes until golden.
3. Lower heat to medium. Stir in butter and garlic, sauté for 30 seconds. Pour in cream, add Parmesan, lemon zest, and herbs. Simmer for 1 minute.
4. Return chicken to skillet. Cover loosely with foil and bake at 400°F for 20-25 minutes.
5. Let rest 5 minutes. Garnish with herbs and extra Parmesan. Serve warm.
