Ingredients

2 boneless, skinless chicken breasts

3 tablespoons olive oil

2 tablespoons lemon juice

1 teaspoon lemon zest

2 cloves garlic, minced

1 teaspoon dried oregano

1 teaspoon paprika

1 cup cucumber, grated and sliced (divided)

1 cup Greek yogurt

2 tablespoons fresh dill, chopped

1/4 red onion, thinly sliced

1 cup cherry tomatoes, halved

1/3 cup Kalamata olives

1/3 cup feta cheese, crumbled

4 cups romaine or mixed greens


Instructions

1. Marinate the chicken in olive oil, lemon juice, garlic, oregano, paprika, salt, and pepper for at least 30 minutes.

2. Grill the chicken over medium-high heat until cooked and slightly charred, about 6-7 minutes per side.

3. Let the chicken rest before slicing.

4. Make the tzatziki: Mix Greek yogurt, grated and squeezed cucumber, garlic, lemon juice, dill, and salt. Chill.

5. Slice the cucumbers, halve tomatoes, slice onions, rinse greens, and crumble the feta.

6. Layer greens on a platter, top with veggies, olives, and feta.

7. Add sliced chicken and spoon tzatziki in the center.

Notes

Salt your cucumber before mixing into tzatziki to keep it from watering down.

You can prep the chicken and tzatziki up to a day ahead.
