Ingredients
1 tablespoon olive oil
1 pound ground beef
2 cloves garlic, minced
2 tablespoons tomato paste
1 cup orzo pasta
2 cups low-sodium chicken broth
1/2 cup heavy cream
1 cup fresh spinach, chopped
1/2 cup grated Parmesan cheese
1/2 teaspoon salt
1/4 teaspoon black pepper
Instructions
1. Heat olive oil in a large deep skillet over medium-high heat. Add ground beef and cook until browned and no longer pink. Season with salt and pepper. Remove and set aside.
2. In the same skillet, reduce heat to medium. Add garlic and sauté for 30 seconds until fragrant. Stir in tomato paste and cook for 1 minute.
3. Add orzo and toast for 1 minute, stirring constantly. Pour in chicken broth, bring to a simmer, reduce heat to low, and cover. Cook for 10–12 minutes, stirring occasionally, until orzo is tender and most liquid is absorbed.
4. Stir in heavy cream and return cooked ground beef to the skillet. Simmer uncovered for 2–3 minutes until slightly thickened.
5. Add chopped spinach and stir until just wilted. Mix in Parmesan cheese until melted and creamy. Taste and adjust seasoning if needed.
