Ingredients

1 lb chicken breasts or thighs

2 cups cooked jasmine or basmati rice

1 ½ cups corn kernels (fresh or frozen)

½ medium red onion, diced

1 medium cucumber, diced

1 medium red bell pepper, chopped

¼ cup chopped fresh cilantro

1 lime, cut into wedges

½ cup Greek yogurt or sour cream

2 tablespoons lime juice

1 clove garlic

1 teaspoon smoked paprika

½ teaspoon ground cumin

1 tablespoon olive oil

½ teaspoon salt


Instructions

1. Marinate the chicken in olive oil, lime juice, garlic, smoked paprika, cumin, and salt. Let sit for at least 30 minutes.

2. Grill or cook the chicken on a hot skillet until nicely charred and cooked through. Slice into bite-sized pieces.

3. Cook the rice according to the package instructions. Optionally, use chicken broth or a bay leaf for added flavor.

4. Grill or sauté the corn until it gets lightly charred and golden.

5. Dice the red onion, bell pepper, and cucumber.

6. Blend yogurt, cilantro, lime juice, garlic, and a pinch of salt to create a creamy sauce.

7. Assemble bowls with rice, grilled chicken, corn, and chopped veggies.

8. Drizzle with the cilantro-lime sauce, top with fresh cilantro, and serve with lime wedges.

Notes

For extra flavor, cook rice in chicken broth or with a bay leaf.

To make it vegetarian, substitute grilled chicken with tofu or black beans.

The sauce can be made ahead and stored in the fridge for up to 3 days.
