1 pound ground turkey (93/7 lean)
1 green bell pepper, chopped
1 red bell pepper, chopped
1 can (15 ounces) fire-roasted diced tomatoes
1 can (15 ounces) kidney beans, drained
1 can (15 ounces) black beans, drained
1 cup frozen corn
2 tablespoons chili powder
1 teaspoon cumin
1 teaspoon smoked paprika
2 cups low-sodium chicken broth
salt and pepper to taste
Instructions
1. Heat olive oil in a large pot over medium heat. Add chopped onion and garlic; cook until soft and fragrant.
2. Add ground turkey; cook and break apart until browned. Season with salt and pepper.
3. Stir in chopped bell peppers; cook until slightly softened.
