Description

If the smell of sizzling sausage in the morning stirs your soul, you’re not alone. These homemade breakfast sausages are juicy, tender, and full of bold savory spices that will make you skip store-bought forever. Made with simple pantry ingredients and a choice of ground pork or turkey, they cook up perfectly browned with a crisp edge and a juicy center. This quick breakfast recipe is perfect for meal prep, easy breakfast ideas, or healthy breakfast options you can freeze.

Ingredients

1 pound ground pork

1 tablespoon brown sugar

1 teaspoon salt

1/2 teaspoon black pepper

1/4 teaspoon red pepper flakes (optional)

1 teaspoon dried sage

1/2 teaspoon thyme

1/2 teaspoon garlic powder

1/2 teaspoon onion powder

1/4 teaspoon paprika

1 tablespoon olive oil (for cooking)

Instructions

1. In a large mixing bowl, combine the ground pork with brown sugar, salt, black pepper, red pepper flakes, sage, thyme, garlic powder, onion powder, and paprika. Mix just until well combined.

2. Divide the mixture into 8 equal portions and shape into flat, oval patties about 1/2 inch thick.

3. Heat olive oil in a large skillet over medium heat. Add patties in batches if needed.

4. Cook for 3–4 minutes per side, or until golden brown and internal temperature reaches 160°F.

5. Transfer to a paper towel-lined plate to drain any excess oil.

6. Serve hot with eggs, toast, or your favorite breakfast sides.

Notes

For a leaner version, use ground turkey and add 1 teaspoon olive oil to the mix.

Do not overmix the meat; it can make the patties tough.

Freeze cooked or raw patties for easy weekday breakfasts.
