Ingredients

1.5 pounds carrots

3 tablespoons honey

3 tablespoons unsalted butter

1 tablespoon olive oil

1/2 teaspoon salt

1/4 teaspoon black pepper

1 tablespoon fresh parsley, chopped

Optional: sea salt flakes for garnish


Instructions

1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.

2. If using large carrots, peel and slice diagonally into 2-inch pieces. If using baby carrots, rinse and pat dry.

3. In a small saucepan, melt the butter over low heat. Stir in honey, olive oil, salt, and pepper until smooth.

4. Place the carrots on the baking sheet. Pour the honey-butter mixture over them and toss to coat evenly.

5. Spread the carrots into a single layer. Roast for 25–30 minutes, flipping halfway, until tender and caramelized.

6. Transfer to a serving platter, garnish with chopped parsley and optional sea salt flakes. Serve warm.

Notes

Use carrots of similar size for even roasting.

You can prep and glaze the carrots ahead, then roast just before serving.
