Ingredients
1 lb ground beef
1/3 cup almond flour
1 large egg
1/4 cup grated Parmesan cheese
2 cloves garlic, minced
2 tbsp chopped parsley
1 tsp dried oregano
1/2 tsp dried basil
1/2 tsp salt
1/4 tsp black pepper
1 tbsp olive oil
1 1/2 cups sugar-free marinara sauce
Instructions
1. In a large bowl, combine ground beef, almond flour, egg, Parmesan cheese, garlic, parsley, oregano, basil, salt, and pepper. Mix thoroughly by hand until well combined.
2. Form the mixture into 12 even-sized meatballs and place them on a plate.
3. Heat olive oil in a large skillet over medium heat. Brown the meatballs on all sides, about 2–3 minutes per side. Remove and set aside.
4. Pour the marinara sauce into the skillet and bring it to a gentle simmer. Add the meatballs back into the sauce, cover, and cook for 15 minutes, or until cooked through.
5. Garnish with extra Parmesan and parsley, and serve hot.
Notes
Use a cookie scoop for evenly sized meatballs.
Don’t overcrowd the skillet when browning. Work in batches if needed.
