Ingredients
1½ cups all-purpose flour
1 tablespoon baking powder
2 tablespoons granulated sugar
½ teaspoon salt
1 large egg
1¼ cups buttermilk
2 tablespoons unsalted butter, melted
1 teaspoon vanilla extract
2 bananas
8 raspberries or red candies
4 ounces chocolate, melted
16 mini chocolate chips
Instructions
1. In a large bowl, whisk together flour, sugar, baking powder, and salt.
2. In a separate bowl, whisk the egg, buttermilk, melted butter, and vanilla until smooth.
3. Pour wet ingredients into the dry ingredients and mix until just combined. Do not overmix.
4. Heat a non-stick skillet over medium heat and lightly grease it.
5. Pour ¼ cup batter for each pancake and cook until bubbles form on top and edges are set, about 2 minutes.
6. Flip and cook for another 1–2 minutes until golden. Repeat to make 8 pancakes.
7. Slice bananas into 16 rounds and place two on each pancake for eyes.
8. Add mini chocolate chips on each banana slice to make pupils.
9. Place raspberries or red candies in the center as the reindeer nose.
10. Pipe melted chocolate into antlers and ears on parchment paper. Chill until firm.
11. Carefully insert antlers and ears into the top of each pancake. Serve with syrup if desired.
Notes
Make the chocolate decorations a day ahead and keep them chilled.
Don’t add chocolate antlers to hot pancakes—wait until slightly cooled.
Use a squeeze bottle or zip-top bag for easier chocolate piping.
