Ingredients
1 block feta cheese (preferably Greek, in brine)
1 cup cherry tomatoes, halved
1/2 cup Kalamata olives, pitted
3 tablespoons extra virgin olive oil
2 cloves garlic, thinly sliced
3 sprigs fresh thyme
1 teaspoon dried oregano
1/2 teaspoon crushed red pepper flakes
Coarse black pepper, to taste
Instructions
1. Preheat oven to 400°F (200°C).
2. In a small baking dish, drizzle 1 tablespoon olive oil and add cherry tomatoes, olives, garlic, thyme, and oregano. Toss to coat.
3. Place feta block in the center of the dish. Drizzle remaining olive oil on top.
4. Sprinkle with crushed red pepper flakes and black pepper.
5. Roast for 20-25 minutes, until tomatoes are blistered and feta is golden at the edges.
6. Let cool for 5 minutes, then serve warm with bread or pita.
Notes
Always use block feta, never pre-crumbled—texture matters.
Don’t skimp on olive oil; it becomes part of the final flavor.
Serve immediately for the best creamy texture.
