Ingredients
450 g carrots, peeled and sliced
2 tablespoons extra virgin olive oil
1 ½ tablespoons lemon juice
1 garlic clove, minced
½ teaspoon ground cumin
¼ teaspoon salt
⅛ teaspoon black pepper
2 tablespoons capers, drained
2 tablespoons currants or raisins
¼ small red onion, thinly sliced
2 tablespoons fresh parsley, chopped
Instructions
1. Peel the carrots and slice them into thin diagonal coins. Steam or boil for 4–5 minutes until just tender. Drain and let cool completely.
2. In a small bowl, whisk together olive oil, lemon juice, minced garlic, cumin, salt, and black pepper. Let sit for 1 minute.
3. In a large mixing bowl, combine cooled carrots, capers, red onion, currants, and parsley.
4. Pour the dressing over the salad and toss until well coated.
5. Cover and chill in the fridge for at least 1 hour before serving to allow flavors to meld.
