Ingredients
2 tablespoons olive oil
1 ½ pounds boneless, skinless chicken thighs
1 large yellow onion, chopped
3 garlic cloves, minced
1 tablespoon fresh ginger, grated
2 large carrots, peeled and sliced
1 can (15 oz) chickpeas, drained and rinsed
1 can (15 oz) crushed tomatoes
2 cups chicken broth
1 teaspoon ground cumin
½ teaspoon ground cinnamon
1 teaspoon turmeric
1 teaspoon smoked paprika
1 teaspoon salt
½ teaspoon black pepper
2 tablespoons chopped fresh parsley or cilantro, for garnish
Instructions
1. Heat olive oil in a large pot over medium-high heat. Sear the chicken thighs for about 3 minutes per side until browned. Remove and set aside.
2. In the same pot, add a little more olive oil if needed. Sauté the chopped onion until translucent, about 5 minutes. Add garlic and ginger, and cook for 1 minute.
3. Add cumin, cinnamon, turmeric, paprika, salt, and pepper. Stir well to coat the aromatics and bloom the spices for 1 minute.
4. Add sliced carrots, chickpeas, crushed tomatoes, and chicken broth. Stir to combine and bring to a simmer.
5. Return the browned chicken thighs to the pot. Cover and simmer on low for 30 minutes, or until chicken is tender.
6. Taste and adjust seasoning as needed. Garnish with chopped parsley or cilantro and serve hot.
Notes
Swap chicken thighs for chicken breast if desired, but reduce simmer time to avoid overcooking.
