Ingredients
6 slices bacon
2 tablespoons olive oil
1 tablespoon butter
1 1/2 pounds Yukon Gold potatoes, sliced into rounds or half-moons
1 small green cabbage, chopped
1 medium yellow onion, sliced
3 cloves garlic, minced
1 teaspoon salt
1/2 teaspoon black pepper
1/2 teaspoon paprika
2 tablespoons fresh parsley, chopped
Instructions
1. Cook the bacon in a large skillet over medium heat until crisp. Transfer it to a plate and leave about 2 tablespoons of drippings in the skillet.
2. Add the olive oil to the skillet, then add the sliced potatoes in an even layer. Cook for 8 to 10 minutes, stirring occasionally, until they begin to turn golden and slightly tender.
3. Add the sliced onion and cook for 3 minutes until softened.
4. Stir in the chopped cabbage and minced garlic. Cook for 8 to 10 minutes, stirring often, until the cabbage wilts and becomes tender.
5. Add the butter, salt, black pepper, and paprika. Stir well and continue cooking until the potatoes are fully tender and everything is nicely coated.
6. Crumble the cooked bacon back into the skillet and toss to combine.
7. Sprinkle with fresh parsley and serve hot.
Notes
Let the potatoes sit undisturbed for stretches while cooking so they develop better golden edges.
Do not overcrowd the skillet, or the cabbage may steam instead of fry. Use a very large skillet if possible.
Add the bacon back at the end so it stays crisp instead of going soft in the pan.
