2 tablespoons butter
1 tablespoon olive oil
1/4 cup all-purpose flour
1/2 teaspoon thyme

1 tablespoon chopped parsley (for garnish)
Instructions
1. In a large pot over medium heat, melt butter with olive oil. Add onion, garlic, carrots, and celery. Sauté until soft, about 5-6 minutes.
