Ingredients

12 ounces smoked sausage

1.5 pounds baby potatoes

12 ounces green beans

2 tablespoons olive oil

1 teaspoon Italian seasoning

1 teaspoon garlic powder

0.5 teaspoon salt

0.5 teaspoon black pepper

1 tablespoon fresh parsley (optional)


Instructions

1. Preheat oven to 400°F (200°C) and prepare a large sheet pan.

2. Slice the sausage into thick coins. Cut the potatoes into quarters. Trim the ends from the green beans.

3. In a large bowl, toss potatoes and green beans with olive oil, Italian seasoning, garlic powder, salt, and black pepper.

4. Spread potatoes on half of the sheet pan and roast for 15 minutes.

5. Add sausage and green beans to the pan. Stir gently to coat with drippings.

6. Roast for another 20-25 minutes until potatoes are fork-tender and sausage is crisped.

7. Garnish with fresh parsley if desired and serve warm.

Notes

Use pre-cooked smoked sausage for best results.

Add red pepper flakes if you like a spicy kick.

For extra crisp, broil the pan for 2-3 minutes at the end.
