Ingredients

226g steak, thinly sliced

170g fusilli or rotini pasta

150g cherry tomatoes

120g broccolini, trimmed

3 cloves garlic, minced

0.5 tsp red pepper flakes

2 tbsp honey

2 tbsp soy sauce

240ml heavy cream

60g grated Parmesan cheese

2 tbsp olive oil

1 tbsp butter

0.5 tsp salt

0.25 tsp black pepper

480ml water (for pasta)


Instructions

1. Heat olive oil and butter in a large skillet over medium-high heat. Season steak with salt and pepper, then sear for 2–3 minutes per side. Remove and set aside.

2. In the same skillet, add a touch more oil if needed. Add broccolini and cherry tomatoes. Sauté for 4–5 minutes until tomatoes blister and broccolini softens. Remove from pan.

3. Lower heat to medium. Add garlic and red pepper flakes. Sauté 1 minute until fragrant. Stir in soy sauce and honey. Let bubble briefly.

4. Pour in heavy cream and stir in Parmesan. Simmer gently until sauce is creamy.

5. Add uncooked pasta and pour in water until just covered. Simmer uncovered, stirring occasionally, for 10–12 minutes until pasta is cooked and sauce thickens.

6. Return steak, broccolini, and tomatoes to the pan. Toss everything together and heat for another 2 minutes. Serve hot with extra Parmesan or chili flakes if desired.

Notes

Use a tender cut of steak and slice against the grain for best texture.

Don’t skip the honey—it balances the spice and rounds out the sauce.

Add a splash of cream when reheating leftovers to keep the pasta silky.
