Ingredients

4 large yellow onions

2 tablespoons olive oil

2 tablespoons butter

1/2 teaspoon salt

1 to 2 tablespoons water (optional, as needed)


Instructions

1. Peel and thinly slice the yellow onions into even slices.

2. Heat olive oil and butter in a large skillet over medium heat until melted and shimmering.

3. Add sliced onions and salt to the pan. Stir well to coat evenly.

4. Reduce heat to medium-low. Stir the onions every 5–10 minutes.

5. After 20 minutes, onions should be softened and lightly golden.

6. Continue cooking for 45–60 minutes total until onions are deeply caramelized.

7. If onions begin to stick, deglaze with a tablespoon of water and scrape the bottom.

8. Once onions are jammy and dark golden, remove from heat and let cool.

9. Store in airtight container or use immediately.

Notes

Use a wide pan for best surface area and even browning.
