Ingredients

1 cup yellow cornmeal

1/2 cup gluten-free all-purpose flour

1 1/2 teaspoons baking powder

1 tablespoon sugar

1/2 teaspoon salt

1 large egg, beaten

3/4 cup buttermilk

1/4 cup grated onion

1 tablespoon chopped fresh parsley

Vegetable oil, for frying


Instructions

1. Pour 2 inches of vegetable oil into a heavy-bottomed pot or deep fryer. Heat to 350°F (175°C) over medium-high heat.

2. In a large bowl, whisk together cornmeal, gluten-free flour, baking powder, sugar, and salt.

3. Add in the egg, buttermilk, grated onion, and parsley. Stir until just combined.

4. Scoop tablespoon-sized portions of the batter and gently drop into the hot oil. Fry in small batches.

5. Cook each batch for 3–4 minutes, turning to brown evenly, until golden and cooked through.

6. Transfer hushpuppies to a paper towel-lined plate to drain excess oil. Serve warm.

Notes

For best texture, don’t overmix the batter.
