Ingredients

8 large eggs

2 cups milk

1 pound breakfast sausage

2 cups shredded cheddar cheese

1 cup baking mix (such as Bisquick)

1/2 teaspoon salt

1/4 teaspoon black pepper

1 tablespoon butter (for greasing)


Instructions

1. In a skillet over medium heat, cook the breakfast sausage until browned and crumbled. Drain excess grease and set aside.

2. Preheat your oven to 350°F (175°C). Grease a 9×13-inch baking dish with butter.

3. In a large bowl, whisk together the eggs, milk, salt, and pepper until smooth.

4. Sprinkle 1 1/2 cups of shredded cheddar cheese evenly into the greased baking dish. Top with cooked sausage.

5. In a separate bowl, mix the baking mix into the egg mixture. Pour the mixture over the sausage layer in the dish.

6. Sprinkle the remaining 1/2 cup of cheddar cheese on top.

7. Bake uncovered for 35–40 minutes or until the center is set and the top is golden.

8. Let the casserole rest for 5–10 minutes before slicing and serving.

Notes

For a spicier twist, use hot sausage or pepper jack cheese.

Letting the casserole rest after baking helps it set and slice cleanly.
