Ingredients

12 oz rigatoni pasta

1 lb large shrimp, peeled and deveined

4 tbsp unsalted butter

2 tbsp olive oil

4 cloves garlic, minced

1/2 cup dry white wine

1 tbsp lemon zest

2 tbsp lemon juice

1/4 tsp red pepper flakes (optional)

1 1/2 cups shredded mozzarella cheese

1/4 cup chopped fresh parsley

1/2 tsp salt

1/4 tsp black pepper


Instructions

1. Preheat oven to 375°F (190°C). Lightly grease a 9×13 baking dish.

2. Cook rigatoni in salted water until just shy of al dente. Drain and set aside.

3. In a skillet, heat 1 tbsp olive oil and 1 tbsp butter. Season shrimp with salt and pepper. Cook 1-2 minutes per side until pink. Remove and set aside.

4. Add remaining butter and garlic to the skillet. Sauté 1 minute until fragrant.

5. Pour in white wine. Simmer 3-4 minutes, scraping browned bits from pan.

6. Stir in lemon juice, zest, and red pepper flakes. Simmer 1 more minute.

7. Toss cooked pasta with sauce and 3/4 cup mozzarella. Fold in half the shrimp.

8. Transfer to baking dish. Top with remaining shrimp and mozzarella.

9. Bake 15-18 minutes until bubbly and golden.

10. Garnish with parsley and serve hot with lemon wedges if desired.

Notes

Don’t overcook shrimp—they’ll finish baking in the oven.

Use freshly grated mozzarella for better melting.

Substitute chicken broth for wine if desired.
