Ingredients

0.5 pound boneless skinless chicken breasts

0.5 cup buttermilk

1 large egg

0.5 cup all-purpose flour

0.5 cup cornstarch

0.5 teaspoon garlic powder

0.5 teaspoon paprika

0.5 teaspoon salt

0.25 teaspoon black pepper

2 cups vegetable oil (for frying)

0.5 cup mayonnaise (for sauce)

2 tablespoons sweet chili sauce

1 tablespoon sriracha

1 teaspoon honey

4 brioche buns

1 cup shredded cabbage (mix of purple and green)

1 jalapeño, thinly sliced

2 tablespoons chopped cilantro

2 tablespoons mayonnaise (for buns)


Instructions

1. Slice and pound chicken breasts to ½-inch thickness. Season with salt, pepper, garlic powder, and paprika.

2. In one bowl, whisk buttermilk and egg. In another bowl, mix flour and cornstarch.

3. Dip each chicken piece in buttermilk mixture, then coat well in flour mix.

4. Heat oil in a skillet to 350°F. Fry chicken for 4–5 minutes per side until golden and cooked to 165°F internally.

5. In a bowl, whisk 0.5 cup mayo, sweet chili sauce, sriracha, and honey to make the bang bang sauce.

6. Lightly toast brioche buns until golden.

7. Spread mayo on the bottom bun. Layer with fried chicken, spoon on bang bang sauce, top with cabbage, jalapeño slices, cilantro, and the top bun.

8. Serve immediately while crispy and warm.

Notes

Make sure your oil is at the correct temperature to avoid greasy chicken.

For a lighter version, use an air fryer or grill the chicken.
