Ingredients

2 pounds ground beef

3/4 cup breadcrumbs

1/3 cup milk

2 large eggs

1/3 cup grated Parmesan cheese

1 tablespoon Italian seasoning

3 cloves garlic, minced

2 cups fresh spinach

2 cups shredded mozzarella cheese

1 cup marinara sauce

1 tablespoon olive oil

1 tablespoon chopped fresh parsley (optional)

Salt and pepper to taste


Instructions

1. Heat olive oil in a skillet over medium heat. Add garlic and cook for 30 seconds. Add spinach and sauté until wilted. Let cool slightly.

2. In a large bowl, mix ground beef, breadcrumbs, milk, eggs, Parmesan, Italian seasoning, salt, and pepper until just combined.

3. Flatten the meat mixture on parchment paper into a 10×12-inch rectangle. Spread spinach evenly, then top with 1 1/2 cups mozzarella.

4. Roll the meatloaf using the parchment as a guide. Seal the seams and ends, then transfer to a greased baking dish.

5. Top with marinara sauce and cover loosely with foil. Bake at 375°F for 40 minutes.

6. Uncover and top with the remaining 1/2 cup mozzarella. Bake another 15–20 minutes, or until internal temperature reaches 160°F.

7. Let rest for 10 minutes before slicing. Garnish with parsley if desired.

Notes

Use parchment to easily roll and transfer the meatloaf into the baking dish.

Don’t overmix the meat mixture; it keeps the loaf tender.

Letting the loaf rest before slicing keeps it juicy and easy to serve.
