Ingredients
1 pound ground beef
2 tablespoons taco seasoning
1/4 cup water
8 small (6-inch) flour tortillas
1 cup refried beans
4 tablespoons tomato sauce
1 cup shredded cheddar cheese
1 cup shredded Monterey Jack cheese
1/2 cup diced tomatoes
1/4 cup chopped red onion
1/2 cup sour cream
2 tablespoons sliced green onion
2 tablespoons chopped cilantro
Instructions
1. Heat a skillet over medium-high heat. Add ground beef and cook until browned, breaking it up as it cooks.
2. Stir in taco seasoning and water. Simmer for 2-3 minutes until thickened. Remove from heat.
3. Lightly oil a large skillet and fry tortillas one at a time until golden and crisp. Drain on paper towels.
4. Preheat oven to 400°F. On a baking sheet, lay out 4 tortillas. Spread refried beans and beef on each.
5. Place a second tortilla on top. Spread tomato sauce and sprinkle with both cheeses.
6. Bake for 8–10 minutes or until cheese is melted and bubbly.
7. Remove from oven and top with diced tomatoes, red onion, sour cream, green onion, and cilantro.
8. Slice and serve hot.
