Ingredients

1 tablespoon olive oil

1 yellow onion, chopped

1 red bell pepper, diced

2 garlic cloves, minced

1 pound ground beef

2 tablespoons tomato paste

1 tablespoon chili powder

1 teaspoon ground cumin

1 teaspoon salt

1/2 teaspoon black pepper

1 cup cooked white rice

1 cup canned black beans, drained and rinsed

2 cups shredded cheddar cheese

4 large flour tortillas


Instructions

1. In a large skillet, heat olive oil over medium heat. Add chopped onion and diced red bell pepper. Cook for 5-6 minutes until softened.

2. Stir in minced garlic and cook for 1 minute more.

3. Add ground beef to the skillet. Break it up and cook until browned, about 7-8 minutes. Drain excess grease.

4. Stir in tomato paste, chili powder, cumin, salt, and pepper. Cook 2-3 minutes until fragrant.

5. Add cooked rice and black beans. Mix well and cook for another 2-3 minutes. Remove from heat.

6. Warm flour tortillas until pliable. Divide beef filling evenly (about 1 cup per burrito).

7. Sprinkle each with 1/2 cup cheddar cheese. Fold and roll into burritos.

8. Optional: Toast burritos seam-side down in skillet for 1-2 minutes per side until golden.

Notes

Use freshly cooked rice or leftover rice that isn’t too moist.

Warm tortillas before rolling to avoid cracks.

To freeze, wrap burritos in foil and label before placing in a freezer bag.
