Ingredients
2 pounds potatoes
2 cups chopped cabbage or kale
6 tablespoons butter
0.5 cup whole milk
4 green onions
0.75 teaspoon salt
0.25 teaspoon black pepper
Instructions
1. Peel and cut the potatoes into chunks. Place them in a large pot, cover with cold water, and add a pinch of salt. Bring to a boil and cook for 15–20 minutes or until fork-tender. Drain well.
2. In a skillet, melt 2 tablespoons of butter over medium heat. Add chopped cabbage or kale and sauté for 5–6 minutes until tender. Stir in the green onions and cook 1 more minute. Set aside.
3. Return drained potatoes to the pot. Add 4 tablespoons of butter and mash until smooth. Stir in the warm milk gradually until desired consistency is reached.
4. Fold in the sautéed greens and green onions. Season with salt and pepper. Mix until evenly combined. Serve hot with an extra pat of butter on top.
