Ingredients
3 packages (10 oz each) frozen chopped spinach, thawed and drained
8 oz cream cheese, softened
1 cup sour cream
2 large eggs, beaten
4 tablespoons unsalted butter, melted
1 teaspoon salt
1/2 teaspoon black pepper
1 small onion, thinly sliced and sautéed
1 1/2 cups shredded sharp cheddar cheese
1/2 cup grated parmesan cheese
Instructions
1. Preheat the oven to 350°F (175°C). Grease a 9×13-inch baking dish.
2. Squeeze all excess moisture from the thawed spinach using a towel or cheesecloth.
3. In a large bowl, mix cream cheese, sour cream, eggs, butter, salt, and pepper until smooth.
4. Fold in the spinach, half the cheddar cheese, all the parmesan, and the sautéed onions.
5. Spread the mixture evenly into the prepared baking dish.
6. Top with the remaining cheddar cheese.
7. Bake for 30–35 minutes until golden and bubbly.
8. Let rest 5 minutes before serving.
Notes
Be sure to fully squeeze the water out of the spinach to avoid a watery casserole.
For a sharper bite, use extra sharp cheddar or a blend of cheeses.
Add cooked bacon or sausage for a heartier twist.
