Ingredients
1 tablespoon butter
1 pound ground beef
4 medium Yukon Gold potatoes
2 medium carrots
1/2 teaspoon garlic powder
1/2 teaspoon salt
1/4 teaspoon black pepper
1/2 cup chopped pecans
1 cup shredded sharp cheddar cheese
Instructions
1. In a large skillet over medium heat, melt the butter and add the ground beef. Cook until browned and fully cooked, about 6–7 minutes. Add garlic powder, salt, and black pepper. Stir to combine. Remove from heat.
2. Peel and slice the potatoes into 1/4-inch thick rounds. Peel and slice the carrots into thin sticks or rounds.
3. Preheat the oven to 375°F (190°C). Lightly grease a 9×13-inch baking dish.
4. Layer half of the potatoes in the dish, followed by half of the beef mixture, half of the carrots, and 1/4 cup chopped pecans. Repeat layers.
5. Sprinkle the top with shredded cheddar cheese. Cover with aluminum foil.
6. Bake covered for 35 minutes, then uncover and bake for another 15 minutes until potatoes are tender and cheese is bubbly.
Notes
Add 10 minutes to the baking time if cooking straight from the fridge.
You can swap the pecans for walnuts or omit them for a nut-free version.
Ground turkey or sausage also works well as a beef substitute.
