Ingredients
3 large overripe bananas
2 cups all-purpose flour
1/2 cup granulated sugar
1/2 cup brown sugar
2 large eggs
1/2 cup vegetable oil
1/2 cup sour cream
1 teaspoon baking soda
1 teaspoon cinnamon
1/2 teaspoon salt
1 teaspoon vanilla extract
3/4 cup toasted walnuts
1/3 cup caramel glaze (optional)
Instructions
1. Preheat oven to 325°F. Grease and line a standard loaf pan.
2. Mash bananas and mix with eggs, oil, sour cream, both sugars, and vanilla.
3. In another bowl, whisk flour, baking soda, cinnamon, and salt.
4. Combine wet and dry ingredients just until mixed.
5. Fold in toasted walnuts, saving some for the top.
6. Pour batter into pan and bake ~60 minutes. Cool 10 minutes before transferring.
7. (Optional) Drizzle cooled bread with caramel glaze.
Notes
Use super ripe bananas—the darker, the better.
Toast your walnuts for bigger flavor.
Don’t overmix the batter; keep it gentle and just combined.
