2 pounds boneless skinless chicken thighs

1 teaspoon kosher salt

1/2 teaspoon black pepper

1 1/2 teaspoons dried oregano

1 teaspoon dried thyme

4 cloves garlic, minced

1 small red onion, sliced

2 cups cherry tomatoes

3/4 cup Kalamata olives

1/4 cup chicken broth

3 tablespoons fresh lemon juice

1/2 cup crumbled feta cheese

2 tablespoons chopped fresh parsley


Instructions

1. Pat the chicken thighs dry and season them with salt, black pepper, oregano, and thyme.

2. Add the sliced red onion, minced garlic, and cherry tomatoes to the bottom of the crockpot.

3. Arrange the seasoned chicken thighs over the vegetables.

4. Drizzle the olive oil and fresh lemon juice over the chicken, then pour in the chicken broth.

5. Scatter the Kalamata olives around and over the chicken.

6. Cover and cook on low for 5 to 6 hours or on high for 2 1/2 to 3 1/2 hours, until the chicken is tender and cooked through.

7. Taste the sauce and adjust with a little extra salt, pepper, or lemon juice if needed.

8. Spoon the chicken and vegetables into serving bowls, then top with crumbled feta and chopped parsley before serving.

Notes

Use chicken thighs for the juiciest texture, since they stay tender during long slow cooking.

Add the feta at the end instead of during cooking so it stays creamy and fresh.
